In order to maximise the lazy Sunday, I worked hard in prepping what food I could on the Saturday so that I had next to nothing to do to get meals on the table the following day.

I went for a light lunch of avocado on toast, followed by nachos in the evening whilst watching the last two episodes of Locke and Key. So glad there’ll be a second season; apart from a couple of scenes that bothered me more than I care to admit, I thoroughly enjoyed it.

Avocado on toast

Without meaning to sound like a hipster (hold my pumpkin spiced latte), I bloody love avocados. I see many different recipes floating around for avocado on toast but this is by far my favourite, and it’s so easy to make.

Taken from The Hairy Biker’s Go Veggie, this is a quick meal I make time and time again and it never fails to please me. It’s just packed with flavour and goodness, and it makes a great breakfast, brunch or lunch.

I usually just make this all in one go but as I had a few dishes to prepare I made up the tomatoes the night before. If you do this and leave them in the fridge overnight, don’t forget to bring them up to room temperature for a few hours before serving. Keeping tomatoes in the fridge stops their enzyme process which affects their flavour, so you’re going to want to get that process going again before you tuck in! This light dish usually carries a little kick, but on this occasion it had some real zing to it which I assumed was from all the flavours developing overnight.

I love the taste of coriander so have never made this with parsley as suggested. I’ve also never got my hands on za’atar as the optional ingredient, however, I recently bought some sumac then added spices to it to create my own just so I could finally try this dish with the mysterious ingredient. Perhaps I’ve just got used to the way I normally make it, but I didn’t feel that the za’atar really added anything exciting to this already delicious dish. I’ve not gone to the trouble of adding it again.

The measurements are easy to follow, but I adjust according to my tastes and appetite and use the recipe as more of a guideline to not forget anything. This recipe is designed for four, however, I prefer to use two pieces of toast, one avocado and 8 cherry tomatoes per person. But you do you.

Wineskin free for mac. I’ve yet to try adding a poached egg on top, but I bet it would incredible if you did.

Recipe is below as I don’t seem to be able to locate it online:

  • 4 slices of sourdough bread
  • 2 avocados
  • Juice of ½ lemon
  • 16 cherry tomatoes, quartered
  • 1 tsp grated lemon zest
  • 1 tsp olive oil
  • A few dashes of mild vinegar (brown rice vinegar is good)
  • A few dashes of hot sauce
  • Small bunch of coriander or parsley
  • Pinches of smoked paprika
  • Pinches of za’atar (optional)
  • ½ tsp sesame seeds
  • Sea salt and black pepper

Toast the sourdough; roughly mash the avocados in a bowl with a generous pinch of salt and lemon juice, and spread this over the toasted sourdough.

Toss the cherry tomatoes with the lemon zest, olive oil, vinegar and hot sauce; tear the coriander or parsley leaves and mix them with the tomatoes, and season them with salt and pepper then divide them between the avocado-covered toast.

Sprinkle with the pinches of paprika, za’atar (if using), and sesame seeds and serve immediately.

My thinking behind having a healthy light lunch means it cancels out the badness of the nachos. I tell myself that’s sound logic.

Big Bad Nachos

To save myself some time I made the chilli the day before, so all I had to do was assemble the nachos for a lazy meal. I’ve made the chilli several times now, and it’s always gone down a treat with whomever I’ve served it up to. It’s feisty, rich and totally delicious. It’s also got chocolate and maple syrup in it. Yummy.

The beauty of the minced mushrooms is how they replicate the texture of mince. There’s quite a lot of them to chop up so the best option really is to throw them into a food processor. They smell great as they’re cooking; never thought I’d say that.

For ease, I’ve taken to just throwing the coriander in whole instead of separating the stalks and chopping them. But, for the purposes of the blog (this has quickly become a favourite saying to justify anything food related) I did it properly on this occasion. The smell you’re rewarded with is something special. That smell only gets better each time you add another ingredient into the mix and noses will soon start sniffing around with interest.

The longer you leave it to simmer, the better the depth of flavours.

More avocados! The guacamole smelt divine, I struggled to not eat it all straight out the pot after I’d made it. Make your life easier by double checking that the avocados you’re using are nice and ripe. I got a pack of four ‘ripe and ready’ ones and there were definitely only two that were ready to be used. At least it adds a little bit of texture, I suppose.

Bangin’ Salsa

If there is anything making this salsa has taught me, it’s never again will I attempt to scoop out the flesh of a cucumber. It went bloody everywhere and for the effort that I went to, for a vegetable I don’t even like (I was honouring the recipe and yes I know that botanically it’s a fruit), there was hardly anything to show for it, apart from my face which was hydrated with flying pulp. If you do make this, just peel the damn thing and chop it from there, I’m sure it will have exactly the same effect. And be warned, this makes a quite a large serving compared to the guacamole.

Bangin’ Salsa

Makes 280g

  • 2 fresh red chillis
  • 1 red or yellow pepper
  • 2 spring onions
  • 3 tomatoes
  • ¼ cucumber
  • 1 lime
  • 2 tbsp red wine vinegar
  • Handful fresh basil
  • Salt and black pepper

Rip the stems for the chillies, cut them in half lengthways and remove the seeds if you prefer a milder flavour, then finely chop. Cut the pepper in half and cut out the stem and seeds. Trim and finely slice the spring onions. Finely dice the tomatoes. Cut the cucumber in half lengthways and scrape out the watery middle with a teaspoon then finely dice. Put everything in a bowl.

Zest the lime, cut it in half, and squeeze the juice into the bowl catching any pips in your other hand. Add the red wine vinegar and tear the basil leaves into the bowl. Season with salt and pepper to taste.

Good grief this was a plate of hot; there were five chillies and plenty of seeds between the three dishes. Tasted bloody amazing though and I can assure you that the following bowls did not look anywhere near as neat as this one.
